Couple of recipes from my old landlord Lance Southgate

General-purpose

Olive Oil
Onion finely chopped
Add Mince and Clove of Garlic
When Mince browned and seperated
Add tin of Chopped Plum Tomatoes
Add water from Tin
Add Mixed Herbs
Add Beef Stock Cube
Add Pepper
Add Worcester Sauce
Add Tomato Puree and Lemon Juice
Simmer and reduce

If Chili add Cocoa, Kidney beans and chili (to taste)

If Bolognase add Mushrooms

Curry

Oil (Olive/Sunflower/Vegatable)
Chopped Onion
Clove of Garlic
Diced Chicken/Lamb/Beef
Add Tandori Spice
Add Lemon Juice
Salt and Pepper (to taste)
Tin of Plum Tomoatoes (Add water to Tin)
Chopped Coriander
Stock Cube
Cardomon Pods (Hot Seed Pods)
Curry Powder (to taste)
Tomato Puree - not too much
Serve with Rice
